Peppermint ganache tart

This recipe is a festive take on one of the recipes in my cookbook - the no-bake chocolate ganache tart. I love a bit of mint chocolate in my desserts, and this recipe incorporates both mint flavoured chocolate and peppermint candy canes to give that refreshing hit with the rich chocolate. As this recipe doesn't require any baking, and only includes a few ingredients, it is a very simple one to whip up for the busy festive season.

Caramel dark choc chip fudge

With the festive season coming up, and an abundance of Christmas parties and social events to look forward to, I thought I'd create a sweet treat that is extremely easy to whip together to take as a dessert or snack for your friends and family. The sweetness of the caramel fudge is balanced out by the dark chocolate chips on top, and the recipe only requires a few minutes of actual work, making it a great option if life is incredibly busy for you at this time of year.

Fat Pig Farm

Earlier this year, we made a booking to visit Matthew Evans' farm, Fat Pig Farm, however unfortunately our initial booking had to be postponed due to covid. So, when the farm reopened mid-way through the year, we were very excited to venture down south for a long lunch feast.

Hobart's latest Japanese restaurant - Yamashita

When we heard that a new Japanese restaurant had recently opened in Hobart, we were very keen to try it out, so made a booking for last night at Yamashita, located on Criterion St in the CBD.

A day at Maria Island

A few weeks ago, not long after the travel restrictions within Tasmania lifted, we decided to make the most of living in this beautiful state, and headed over to Maria Island for a day trip. It takes about 1.5 hours to drive from Hobart over to Triabunna, where the ferry to Maria Island departs each day. Due to the low tourism activity at the moment, there was just one ferry that departed Triabunna that morning (at 10am) and one ferry that arrived back at Triabunna in the afternoon (leaving Maria Island at 3:30pm), so we knew we wouldn't have too long to explore the island.

    The Three Capes Track

Ever since moving to Tasmania over four years ago, Dave and I have really wanted to embark on the Three Capes Track, however it wasn't until this year that we finally booked in for the four day hike.

    Asian-style chicken noodle soup

Often I feel like having a warming bowl of soup for dinner, and the flavours of an Asian-style soup can add a lot of variety to an otherwise standard soup recipe. The flavour combination of ginger, garlic, soy and lime adds a lot of zest to this dish, while the fresh chilli gives a nice kick without being too overpowering. The protein from the lean chicken breast, paired with the carbohydrates from the rice noodles, will keep you full for hours.
